Ingredients
- ¾ cup butter, melted
- 1 cup dark brown sugar
- ½ cup sugar
- 1 large egg
- 1 egg yolk
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 2 cups Peanut Lover’s Mix
Directions
Step 1
Prepare Your Oven:
Preheat your oven to 350°F on the convection setting. Line a baking sheet with parchment paper.
Step 2
Cream the Butter and Sugars:
Using an electric mixer fitted with a paddle attachment, beat the melted butter and sugars together on medium speed until the mixture becomes light and fluffy. Scrape down the sides of the bowl to ensure everything is fully incorporated.
Step 3
Incorporate Wet Ingredients:
Add the egg and egg yolk one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 4
Mix Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt.

Combine Wet and Dry Ingredients:
Reduce the mixer speed to low and gradually add the dry ingredients to the wet ingredients. Stop mixing as soon as streaks of flour remain.
Step 6

Add the Peanut Lover’s Mix to the dough. Run the mixer for two turns, then finish combining by hand using a spatula. Mix just until the dough is uniform and the inclusions are evenly distributed.
Step 7
Shape the Cookies:
Use an ice cream scoop to portion the dough into balls. Place them on the prepared baking sheet, spacing them 2 inches apart .
Step 8
Bake to Perfection:
Bake for 8–10 minutes , rotating the sheet halfway through. The cookies are ready when the edges are crisp, and the centers remain pale. They’ll continue to cook as they cool.
Step 9
Cool and Enjoy:
Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack. Enjoy warm or store in an airtight container for up to a week.
